One of the Yummiest Ways to Get Your Veggies In!

 

Looking for an easy way to make veggies more flavorful and satisfying? This simple roasted veggie recipe has become a favorite around here — and even veggie skeptics may find themselves going back for seconds 🙂

Roasted Veggies

 

Ingredients

  • ¼ tsp paprika
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2–3 cups chopped veggies

Instructions

Mix the seasonings, olive oil, and lemon juice together.

Place the veggies in a baking dish, then brush or toss the mixture over them until evenly coated.

Cover and bake at 375°F for 45–60 minutes, depending on how soft or roasted you like your veggies.

  • Fresh beets
  • Sweet potatoes

  • Watching calories? You can reduce the oil and it still comes out great.
